Torben: In One of Denmark’s Largest Forests, You Can Wander for Miles
Nature shapes life for Torben Thornæs, founder of Thornæs Distillery in North Zealand. When he’s not crafting organic whisky, he’s exploring the outdoors – kayaking on Lake Esrum, hiking through Gribskov or wandering around Gilleleje Harbour and the coast.

1. Solbjerg Lake Meadow
A small natural gem located just outside our windows at Thornæs Distillery. Every day, you can see sea eagles circling above the lake, and sometimes deer emerge from Gribskov to graze nearby. There’s a path most of the way around the lake, winding along both the shoreline and through the forest. During the summer season, you can stop for a coffee at the café by Haldbjerg.
2. Gilleleje Harbour
Something is calming about strolling through the harbour area, where visitors and industry blend almost seamlessly together. Whether you’re in the mood for fried fish or soft ice cream, there are plenty of options along the quay, and out by the beach, there’s lots of space to enjoy the water and the sunset.
3. Kayaking on Lake Esrum
The landscape seen from the waters of Lake Esrum is truly a wonderful experience. From the boat rental at Skipperhuset on the Fredensborg side, you can paddle south towards the protected natural area or north towards the castle gardens and open fields. And when the trip is over, you can reward yourself with one of the famous ice cream cones from Sørup Ice Cream House.

4. Ågabet in Frederiksværk
Another great place for paddling – while also relaxing with a coffee or a cold drink – is Ågabet, located right at the entrance to Lake Arresø. Ågabet offers access to boating on the lake but also serves as an outdoor centre with various activities during the summer months. A lovely place to spend an afternoon.
5. Hiking in Gribskov
I’ve lost count of how many times I’ve wandered through Gribskov, watching the vegetation change with the seasons. As one of Denmark’s largest forests, you can walk for miles without meeting another person, while the landscape constantly shifts between deciduous woodland, spruce forest, birch trees, small lakes, open clearings, and wetlands.
