Johs: Farming Can Be Done Without Exploiting the Land

As head chef at Torup Spisehus, Johannes “Johs” Lund has extensive knowledge of local organic produce and the people who grow it. In his free time, he often heads to the beach, the forest, or the farm shops that also supply the restaurant’s kitchen. He shares some of his favourite places.

1. Hald Beach

One of the places where I find the greatest sense of peace and tranquillity, both during the busy summer season and in winter when life slows down, is the coastline around Hald. Whether it is being blown through by autumn winds or feeling recharged by the water in summer, I have never had a bad trip to the beach.

2. Tisvilde Hegn

A magical place, even though it is well known. The forest floor, covered in soft moss, makes you lose track of both time and place, and it is a wonderful area for foraging.

3. Engmosegaard

This is one of the farm shops I have worked with since opening the restaurant. Throughout the season, it supplies the kitchen with fantastic vegetables, high-quality meat, and milk.

4. Andelsgaarde – Lerbjerggaard

A fantastic project that shows how farming can be carried out without exploiting the land. Nanna and Christopher grow vegetables of the highest quality while running a sustainable agricultural operation. They are also a regular supplier to the restaurant.

5. Tothaven

Ever since it opened, I have enjoyed the truly unique place that Pernille and Jakob have created. It is a place where people and animals live together with the utmost respect for one another. On top of that, they produce what may well be the best ice cream and cheese in North Zealand.
