The Taste of Halsnæs – 4 Courses

Restaurant Knud presents a gastronomic experience featuring a menu that highlights local ingredients and creative flavour combinations.

The Menu – from Sea and Soil

  • Starter: Rye-battered hake with local mushrooms served as a spelt risotto, blended with goat cheese from Tothaven, lemon butter, and puffed Øland wheat from Grønnessegaard.
  • Intermediate Dish: Salted and dried cod roe (bottarga) on gastrique-glazed beets and pumpkin purée from Sølager, topped with bladderwrack seaweed and homemade croutons.
  • Main Course: A Nordic surf’n’turf with slow-roasted organic beef from Engmosegaard, garlic-fried shrimp, crab bisque made from local shore crabs, and roasted roots and cabbage from Andelsgården.
  • Dessert: Tutti Frutti “Sonntag” – a tribute to the season’s fruits and berries with vanilla ice cream, macaroons, and sea buckthorn foam.
